Veggie Wedgie Wednesday

Well being it's Thanksgiving- TOMORROW
Here's my favorite Sweet Potatoe Recipe (very high calories but sooooo good)
You can watch a video of it HERE
Ruth's Chris special sweet potato casserole

Makes 12 servings

Crust
1 cup brown sugar
1/3 cup flour
1 cup chopped nuts (pecans preferred)
1/3 stick butter, melted
Combine brown sugar, flour, nuts and butter in mixing bowl. Set aside.

Sweet Potato Mixture
3 cups mashed sweet potatoes
1 cup sugar
½ teaspoon salt
1 teaspoon vanilla
2 eggs, well beaten
1/2 cup (1 stick) butter, melted

Preheat oven to 350 degrees. Coat a medium-size casserole dish with nonstick spray.

Combine sweet potatoes, sugar, salt, vanilla, eggs and butter in a large mixing bowl in the order listed. Beat thoroughly with a hand mixer to increase the fluffiness of the sweet potato mixture.

Pour mixture into the baking dish. Bake for 30 minutes. (At this point, dish can be covered and refrigerated.)

Sprinkle the surface of the sweet potato mixture evenly with the crust mixture and return to oven for 10 minutes. Allow to set at least 30 minutes before serving.

The brown sugar and pecan crust should be slightly browned and crunchy.

Doorways to Healing - Couples and Cancer

Rob and I attended Doorways to Healing this past weekend!

It was great for the both of us!

Cancer can be so hard on a couple and communication is such a huge part of it.
For some reason couples can clam up and then just go on with this huge thing between the two of them.
It's only when we feel safe enough to open up that we do and then we get stronger.
I'm so grateful Rob went- because it sure wasn't an easy thing to do.
We were taught a few very important things and given some tips to take along on our journey.
And how amazing to meet other couples who "get" what we go through every day
.....still.
We have some amazing friends, but thank God they really don't know how it goes.
It's good because we can be with them and it's very free of cancer.
We love our friends happy and untouched by cancer, and we love our friends who've battled cancer.

We love Doorways to Healing and our so thankful to the kind and loving Doctors!
