Pita Pizza

I love this super easy dinner- Pita Pizzas
I usually take a pita drizzle olive oil on it
cut up a tomato
cut up some fresh mozzarella (buffalo) cheese
top the pita with toms and cheese
sprinkle some Italian seasoning or just salt and pepper
put it under the broiler
pick some fresh basil leaves
the pita will brown fairly quickly
get it out of the oven and top with the basil
basil can't go under the broiler- doesn't taste good.


I looked around the web and found this low fat version:


Pita Pizza with Roasted Red Pepper Sauce and Mozzarella


YOU'LL NEED:

½ cup jarred roasted red peppers (in water, drained)

2 tsp. olive oil

1 Tbsp. balsamic vinegar

1 whole-grain pita, split into 2 thin rounds

½ cup baby spinach

2 slices part-skim mozzarella

2 Tbsp. chopped fresh basil

Preheat broiler. In a blender or with a hand blender, puree peppers, oil and vinegar until smooth. Spread on pita and top with spinach and cheese. Broil until cheese is bubbling, about 8 minutes. Top with basil.

Our garden is coming to a close- I finally picked all the tomatoes and pulled the plants out.  :(

My parsley, basil and rosemary are growing strong.  I love bringing in my parsley and putting it in some water so that when I need it is super fresh!  YUM.

The Blessed Mother


It's been crazy around here and at times things so bad.  The weather has been bad for Rob's work and then all the flooding, it's easy to get down on things.

Rob has gone to mass during the day a couple of times- I believe looking for guidance.  He has a lot of faith and it's nice when he goes and comes back with something for me.

The other day he spoke of Father talking about the Blessed Mother; and the next time we think we have it so bad think about her.  Think about how she had to watch as they nailed her son to the cross.  

See I was raised Catholic and attended Catholic school right from 1st to 12th grade so I have a pretty good knowledge of my religion.  Rob on the other hand is learning more and more and asking me questions and sometimes I know the answer and sometimes I don't.  It's so refreshing to me and it keeps me up on my stuff.  It's nice we share what we learn with each other and there is always more to learn or more to remember that we may have forgotten.  Rob was so taken with the idea of the Mother watching her son crucified that he had to share it with me.  I am so blessed.

So today at the grocery store I bought flowers and was able to decorate my Mother Mary's crown with some pretty green buds.  I love her so much and I will keep her in mind when I want to complain or get down on things.     

Even if you are not Catholic you can relate to a Mother's love for her son and her son being put to death.  What incredible love she had to be there for him through it all.  Could I ever do that?  It's unbelievable.  



I love this prayer my mother told me about:

Thankful Thursday

Well I have a lot to be thankful for, but can I have little fun with the small things I think about and give thanks for:

I'm so thankful for my eye lashes- I LOVE them!  I love putting on loads and load of mascara!  I'm so excited that spider lashes are in style!





I love my Salt Pig!  I think this is the cutest and coolest kitchen thing I've bought in a long time.
I found my salt pig at HomeGoods and I seen them at TJMaxx.



I love Fridays and weekends................I love that I live near a little town called Greene and they will have an apple festival this Saturday~ 9-4 at Lions Park.

It's an apple festival so it will be smelling of fall and apples- Yahoo!
