Shopping for Farmer's Market Dinner :)

 So at Lone Maple I spent about  $10
Miller's Farm- $3 (the recipe didn't call for tomatoes, but I LOVE them)

And very nice the corn stand had 1/2 corn I spent $2

Before I head home from work today I need to purchase a couple ingredients from the grocery store  :)
AND tonight WE will FEAST!!!

Veggie Wedgie Wednesday~ Broc&Bok

Broccoli with Bok Choy

--Hmmmm- Martha doesn't call it Broc&Bok, but I like saying it like that.

Well I browsing for a side dish to go with Lucas and Rob's dinner tonight and I found this one:



On Martha's site...where else?

I liked this recipe because I could get home by 5:30 and manage to get it done in time to leave the house by 6:05!!!  Very few ingredients as well.  The seasoning used is soy sauce, garlic, ginger and oil.  I didn't have fresh ginger so I used the ginger powder I had.

Rob said it was delicious and I'm not too crazy about Soy sauce- but Lucas likes it so I thought he would like it.  I did try it and I actually liked it too.  I really liked the bok choy!  I used a low sodium soy sauce and it tasted just fine.

I broiled the guy's pork chops got this side dish done and made it to Zumba by 6:30!!  Now that's a keeper!
I ate after class~ fish with left over tomato salad and a spoon of the Broc&Bok!!

Veggie Wedgie Wednesday


Well it's getting nicer outside and it's time for yummy summer favorites.....................

Sunday night I ended up doing another- make everything I have in the frig for dinner- because I just didn't know what to make.  We had a couple of chicken dinners from the car show up the road so I really only needed some veggies and a starch.


Lucas loves roasted asparagus and it's just so easy......I love using Wegman's Basting Oil- it's good on lots of things!


I always have a few cans of chickpeas on hand so I quickly did a google search and found this RECIPE on bon appetit


I can never pass these up in the grocery store- I'm addicted to them!
All you need for these are red wine vinegar, olive oil and SeaS&CrackedP


For the starch I cooked up Veggie Delights (pretty sure that's the name)- It's pasta made from veggies.
I googled easy pasta sauces and found a few HERE
from Williams&Sonoma Blog

I ended up with the simplest
from the Italian Dish Blog


All these used very little ingredients- I must always have these things on hand:
Sea Salt
Olive Oil
Cracked Pepper
Vinegar- Red Wine and Balsamic
Garlic
Basil- Fresh
Parsley- Fresh
Lemons
Block of Cheese
Pasta/Rice
Chicken
Bread would be nice
I guess these would be my favorite staples
oh and milk for the BOYZ ;)

For leftovers the next day I added the asparagus to the left over pasta and it was yummy....could have even thrown in the chickpeas or chicken as well.

I honestly love Cauliflower Popcorn

All you need is some olive oil, sea salt, turmeric and nutritional yeast-
Make your golden mixture


Throw in your tiny cuts of Cauliflower


I love it raw, but sometimes I roast it!!!!  I WANT some.

Veggie Wedgie Wednesday



Here's a great Italian Tossed Salad

Ingredients:
2 cups romaine lettuce - torn, washed and dried
1 cup torn escarole
1 cup torn radicchio
1 cup torn red leaf lettuce
1/4 cup chopped green onions
1/2 red bell pepper, sliced into rings
1/2 green bell pepper, sliced in rings
12 cherry tomatoes
1/4 cup grapeseed oil
2 tablespoons chopped fresh basil
1/4 cup balsamic vinegar
2 tablespoons lemon juice
salt and pepper to taste

Directions

1.In a large bowl, combine the romaine, escarole, radicchio, red-leaf, scallions, red pepper, green pepper and cherry tomatoes.

2.Whisk together the grapeseed oil, basil, vinegar, lemon juice and salt and pepper. Pour over salad, toss and serve immediately.

Veggie Wedgie Wednesday

Well it's been a while.................I have been following along on Raw Rebalance and I really love them over there.  I'm trying add more Raw to my meals, but it's SO hard sometimes!  BUT I am so happy to be on the program because there are so many inspiring people, ideas, and recipes on there.  I have tried a RAW stir fry and that was good and I really like the RAW Cauliflower Popcorn.

I do like the Cauliflower cooked and roasted too.  This recipe is for a Cauliflower Popcorn / Roasted.



Ingredients:


• 1 head cauliflower or 1 head equal amount of pre-cut commercially prepped cauliflower

• 4 tablespoons olive oil

• 1 teaspoon salt, to taste

Directions:

Preheat oven to 425 degrees.

Trim the head of cauliflower, discarding the core and thick stems; cut florets into pieces about the size of ping-pong balls.

In a large bowl, combine the olive oil and salt, whisk, then add the cauliflower pieces and toss thoroughly.

Line a baking sheet with parchment for easy cleanup (you can skip that, if you don't have any) then spread the cauliflower pieces on the sheet and roast for 1 hour, turning 3 or 4 times, until most of each piece has turned golden brown.

(The browner the cauliflower pieces turn, the more caramelization occurs and the sweeter they'll taste).

Serve immediately and enjoy!

 that I really love and it has Nutritional Yeast in it. 

What's Nutritional YEAST you ask? 

Definition: Yellow in color and with a nutty cheesy flavor, nutritional yeast is an inactive yeast that is a favorite amongst many vegans because of its unique flavor and similarity to cheese when added to foods. Sprinkle some on hot popcorn or garlic bread, or add a generous spoonful to a stir fry or pasta sauce. Nutritional yeast is also the only reliable food source of vitamin B12, so if you're vegan, it's a good idea to add some to your food regularly. Nutritional yeast can be found in the bulk foods or supplement section of your health food store. You can look for either nutritional yeast flakes or powder, but be sure you don't get brewer's yeast by mistake, as its quite similar in appearance.

Veggie Wedgie Wednesday

Little Deere PolkaDots in the Broccoli Woods..


Roasted Broccoli
Alton Brown of Food Network

Ingredients:


1 pound broccoli, rinsed and trimmed

2 tablespoons olive oil

2 cloves garlic, minced

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

1/3 cup panko bread crumbs

1/4 cup finely grated Parmesan or sharp Cheddar


Well this dish was suppose to be done with panko, but because I was trying to cut out gluten I used this:



Directions:


Preheat oven to 425 degrees F.
Cut the broccoli florets into bite size pieces. Cut the stalk into 1/8-inch thick, round slices. Place the broccoli into a mixing bowl and toss with the olive oil, garlic, kosher salt and pepper and set aside.

Spread the panko into a 13 by 9-inch metal cake pan and place into the oven for 2 minutes or until lightly toasted. Remove the panko from the oven and add to the bowl with the broccoli mixture. Toss to combine. Return the mixture to the cake pan, place in the oven and roast just until the broccoli is tender, 8 to 10 more minutes. Remove from the oven, toss in the cheese and serve immediately.

We really loved this recipe and it was SUPER simple!  I bet it tastes even better with the panko.


Rob had his with pasta and our very own tomatoes and basil.

Happy Saturday.....

The tomatoes keep coming and you can never have too many tomato recipes!

This recipe is super easy and very good! 
Get your tomatoes cut up
and cut up a nice big green pepper

and then maybe 1/2 of a beautiful red onion

a couple stalks of celery
mix it all together
dress them with these guys
you can use regular sugar....i'm getting off sugar AGAIN so I'm back to Stevia ( which isn't bad at all )
stopping coffee, sugar, dairy and meat for a while is HARD
i am so thankful for my tea
and these guys:
if you haven't tried them they are good
all you do is stream them- i just use a pot of water and put them in a strainer with a lid for a few minutes and they are ready to go   

bust them open add salt and you are all set
at my brother's house they serve them with soy sauce which is yummy too.

my own little cooking challenge

my cooking shoes....lol
The other night (Monday) I knew I had better cook some meals so that during this busy week we would have food and so here's how crazy it was in my kitchen........I gave myself a little challenge.

So right after work I went to the grocery store for the ingredients for the following meals:


Pork Chops
Sausage with Peppers and Onions
A Crock-pot Chicken with Carrots and Potatoes
Mushrooms for Broiling
And what ever else we needed like toothpaste, water, bread and so on.

Got home at

No one had really eaten dinner yet

Sink has a bit of dishes


and I unloaded


1st Clear sink
2nd Get Pork Chops in the oven because they are tonight’s dinner
3rd Prep Veggies for Chicken in Crock-pot and for the Sausage with Peppers and Onions


4th Clean the bird (make Rob feel guilty enough to offer to dress the chicken for the pot)

5th Prep the Sausage with Peppers and Onions and get them in the oven
6th Cut up Zucchini and Google “HOW to Broil Zucchini”~get those suckers in the oven





7th Wash up the 2 lovely fruits of choice this shopping trip
Peaches – I was so hungry for them when I seen them- but they disappoint- don’t get the peaches from NJ. They will end up getting juiced!

Cherries- they do not disappoint- should have bought more of them!

8th Get my mushrooms soaked up with marinade and put in the frig


9th Zuks done and they are so yummy~ added fresh grated Parmesan Cheese and ate half the tray myself!
Packaged what I didn't eat in small containers for easy transport to work.




Zucchinis not being eaten with our delicious pork chops as planned~ I'm the only HUGE ZUK FAN!

Good Morning Beautiful Organic Chick!

I'm planning on using the bones to make a special soup for a friend going through cancer treatment~It was the motivation behind our special chicken meal.  I hope it turns out O.K.~ the soup that is. 
The chicken tastes SO GOOD 

AND thanks to Rob too who cheered me on, dressed the chick, washed the dishes, ate my grub, and thanked me!  

So no veggie recipe this week~except that all you need is salt and pepper for the Zuks before you broil them and then fresh grated parm tastes SO GOOD too.

If the soup turns out I'll post that recipe later
